The Ten-Course Journey

A meticulously composed symphony of flavors and techniques.

1. Sakizuke

An appetizer served with sake, similar to an amuse-bouche, setting the tone for the seasonal journey ahead.

2. Suimono

A clear soup with premium dashi. A palate cleanser that highlights the purity of Japanese water and kombu.

3. Hassun

The visual highlight. A platter expressing the current micro-season through various small bites.

4. Mukozuke

Seasonal sashimi, including omega-3 rich selections chosen daily from the market.

5. Takiawase

Vegetables served with meat, fish, or tofu, simmered separately to preserve individual flavors.

Vegetarian & Gluten-Free Adaptations

At Midori no Mori, we believe high-art dining should be inclusive. Inspired by shojin-ryori (temple cuisine), our vegetarian Kaiseki features plant-based elegance using yuba, local root vegetables, and mountain herbs.

For our gluten-free guests, we utilize traditionally brewed tamari and craft our dashi without wheat-derived additives, ensuring a safe, authentic washoku experience in Toshima.
